Campfire Roasted Zombie Chicken

  • 4 Chicken Breasts

  • 4 Peppers (Sweet)

  • 1 Onion

  • 3 Garlic Cloves

  • Salt/Pepper

  • Olive Oil

  • Butter

  • Chicken Seasoning

  • BBQ Sauces (2 generic flavors)

  • 1 Bag Fingerling Potatoes


  • Cut and core peppers in half; clean half pieces and quarter.

  • Cut and quarter the onion

  • Mince garlic

  • Toss onions and peppers in oil and salt and pepper

  • Boil and season water with 1 tbs of butter and slowly poach potatoes

  • Season and dry rub chicken

  • Make BBQ sauce; whisk equal parts of each together

  • When grill is up to temperature, grill chicken for 30 minutes or until an internal temp of 170 degrees is reached.

  • When chicken is cooking place them to the side and grill vegetables, cook until both sides have grill marks. Hold to the side until ready to finish

  • Have a preheated cast iron pan ready and start to brown 4 tbs of butter. When the butter is brown, drain off potatoes and add to cast iron pan with brown butter.

  • Glaze chicken with BBQ sauce and let set in

  • While chicken and potatoes are finishing, in a separate pot/pan, saute off 2 tbs of butter and add minced garlic and grilled vegetables.

  • Saute everything until coated and well heated through

  • Plate and serve
